  • Meat Thermometer

Ingredients
  

  • 12 to 14 Turkey
  • 1 bag Elk Creek Turkey Brine
  • 1 gallon Water
  • 1 Lemon quartered
  • 1 Apple quartered
  • 2 Onions quartered
  • 1 pack Poultry Herbs
  • 1 tablespoon Elk Creek Gold Dust Flavor Bomb
  • 1 stick Butter softened
  • Elk Creek AP Rub
  • Elk Creek Hog Knuckle Honey Chipotle Rub
  • 1 can I Can't Believe It's Not Butter spray

Instructions
 

  • Mix bag of brine with 1 gallon of water. Brine turkey for 12-14 hours (1 hour per pound)
  • Pat turkey dry.
  • Stuff turkey with aromatics; lemon, apple, onion, poultry herbs.
  • Mix softened butter and Elk Creek Gold Dust Flavor Bomb.
  • Spread seasoned butter under the skin of the turkey on the breasts.
  • Season turkey with Elk Creek AP Rub. (coat like you would salt and pepper.)
  • Season liberally with Elk Creek Hog Knuckle Honey Chipotle Rub.
  • Smoke at 300° F for about 4 hours or until temp in breast reaches 160° F
  • Spritz turkey with butter every 30 minutes.
  • Rest for 30 minutes before slicing and enjoying.

Recipe from Machete Boys BBQ. Allow 1 hour of brining per pound of turkey.
