Ingredients
  

Bread Pudding

  • 2 lbs Zucchini
  • 3 Eggs beaten
  • 3 T Flour
  • 1 pinch Salt
  • 2 T Sugar
  • 1 tsp Vanilla
  • 3/4 cup Milk
  • 3/4 stick Butter melted
  • 3/4 tsp Baking powder
  • 1 T Cinnamon

Frosting

  • 8 oz Cream cheese
  • 1 stick Butter softened
  • 2 tsp Vanilla
  • 4 cups Powdered Sugar
  • Dizzy Pig Pineapple Head or Tacticalories Sinnamon Crisp

Instructions
 

  • Steam zucchini until tender. Peel, remove seeds and cube.Place in food processer and mash.
  • In a bowl, mix eggs, flour, salt, sugar and milk until blended.
  • Add in mashed zucchini.
  • In a separate bowl, blend butter and baking powder and add into the zucchini mixture.
  • Pour into greased 9x13 baking dish and smoke for 50-60 minutes or until toothpick inserted in center comes out clean.
  • While bread pudding is cooling, make the frosting.
  • Mix all the frosting ingredients together until smooth.
  • Serve cooled bread pudding with a dollop of frosting.
  • Sprinkle with your choice of Pineapple Head or Sinnamon Crisp.
  • Enjoy!
