- Food processer
- Bowl

Ingredients
Bread Pudding
- 2 lbs Zucchini
- 3 Eggs beaten
- 3 T Flour
- 1 pinch Salt
- 2 T Sugar
- 1 tsp Vanilla
- 3/4 cup Milk
- 3/4 stick Butter melted
- 3/4 tsp Baking powder
- 1 T Cinnamon
Frosting
- 8 oz Cream cheese
- 1 stick Butter softened
- 2 tsp Vanilla
- 4 cups Powdered Sugar
- Dizzy Pig Pineapple Head or Tacticalories Sinnamon Crisp
Instructions
- Steam zucchini until tender. Peel, remove seeds and cube.Place in food processer and mash.
- In a bowl, mix eggs, flour, salt, sugar and milk until blended.
- Add in mashed zucchini.
- In a separate bowl, blend butter and baking powder and add into the zucchini mixture.
- Pour into greased 9x13 baking dish and smoke for 50-60 minutes or until toothpick inserted in center comes out clean.
- While bread pudding is cooling, make the frosting.
- Mix all the frosting ingredients together until smooth.
- Serve cooled bread pudding with a dollop of frosting.
- Sprinkle with your choice of Pineapple Head or Sinnamon Crisp.
- Enjoy!
