Sweet Potato Souffle
A smoky sweet potato casserole with a delicious pecan streusel topping, perfect as a side dish.

Sweet Potato Base
- 4 large sweet potatoes
- 6 oz evaporated milk
- 0.5 cup brown sugar
- 2 eggs, beaten
- 1 tsp vanilla
- 1 tbsp salt
- 1 dash nutmeg
- 1 dash allspice
- 1 dash cayenne
Streusel Topping
- 0.5 cup flour
- 0.5 cup chopped pecans
- 0.33 cup brown sugar
- 1 tsp salt
- 1 stick unsalted cold butter
Instructions
- Smoke potatoes wrapped in foil until soft, about 1 hour at 350° F.
- Peel potatoes and discard skin.
- Mash potatoes with sweet potato ingredients.
- Put potato mixture into greased 9x13 pan.
- Make the streusel. Mix flour, brown sugar and salt in bowl.
- Cut cold butter into mixture with pastry cutter or fork until crumbly.
- Mix in chopped pecans.
- Spread streusel over sweet potato mixture.
- Smoke at 350° F for 45 minutes.
