Sweet Potato Base

  • 4 large sweet potatoes
  • 6 oz evaporated milk
  • 0.5 cup brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla
  • 1 tbsp salt
  • 1 dash nutmeg
  • 1 dash allspice
  • 1 dash cayenne

Streusel Topping

  • 0.5 cup flour
  • 0.5 cup chopped pecans
  • 0.33 cup brown sugar
  • 1 tsp salt
  • 1 stick unsalted cold butter

Instructions
 

  • Smoke potatoes wrapped in foil until soft, about 1 hour at 350° F.
  • Peel potatoes and discard skin.
  • Mash potatoes with sweet potato ingredients.
  • Put potato mixture into greased 9x13 pan.
  • Make the streusel. Mix flour, brown sugar and salt in bowl.
  • Cut cold butter into mixture with pastry cutter or fork until crumbly.
  • Mix in chopped pecans.
  • Spread streusel over sweet potato mixture.
  • Smoke at 350° F for 45 minutes.
