Steam zucchini until tender. Peel, remove seeds and cube.Place in food processer and mash.
In a bowl, mix eggs, flour, salt, sugar and milk until blended.
Add in mashed zucchini.
In a separate bowl, blend butter and baking powder and add into the zucchini mixture.
Pour into greased 9x13 baking dish and smoke for 50-60 minutes or until toothpick inserted in center comes out clean.
While bread pudding is cooling, make the frosting.
Mix all the frosting ingredients together until smooth.
Serve cooled bread pudding with a dollop of frosting.
Sprinkle with your choice of Pineapple Head or Sinnamon Crisp.
